In a large bowl, combine the cornmeal and salt.
Gradually add warm water to the cornmeal mixture, stirring continuously.
Let the dough rest for 5 minutes to hydrate.
Divide the dough into 8 equal portions and shape each into a ball.
Flatten each ball into a disc about 1/2 inch thick.
Preheat a skillet or griddle over medium heat and add a little oil.
Cook each arepa for about 5-7 minutes on each side until golden brown.
Remove from heat and let cool slightly.
Slice open the arepas to fill with desired ingredients.
Serve warm and enjoy!
