Combine warm water, sugar, and yeast in a bowl. Let sit for 5-10 minutes until frothy.
Add flour and salt to the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth.
Place in a greased bowl, cover, and let rise for 1 hour until doubled.
Preheat the oven to 425°F (220°C) and line a baking sheet.
Punch down the dough and divide into 12 pieces.
Shape each piece into a ball and poke a hole in the center.
Boil bagels in a pot of water for 1-2 minutes on each side.
Remove and place on the baking sheet. Sprinkle with seeds if desired.
Bake for 20 minutes until golden brown. Let cool before serving.
