Ingredients

  • 1 whole chicken about 4-5 lbs
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh herbs rosemary, thyme, or parsley

Instructions

  • Preheat your oven to 375°F (190°C).
  • Rinse the chicken under cold water and pat it dry with paper towels.
  • Place the chicken in a roasting pan, breast side up.
  • Rub the olive oil all over the chicken skin.
  • Season the chicken generously with salt, pepper, garlic powder, and onion powder.
  • Tuck the wing tips under the chicken to prevent burning.
  • If desired, place fresh herbs inside the cavity for added flavor.
  • Roast the chicken in the preheated oven for about 1 hour and 15 minutes.
  • Check the internal temperature; it should reach 165°F (75°C).
  • Let the chicken rest for 10-15 minutes before carving.
