Ingredients

  • 4 cod fillets 6 oz each
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking dish with parchment paper.
  • In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
  • Place the cod fillets in the baking dish, skin side down.
  • Brush the olive oil mixture generously over the cod fillets.
  • Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily.
  • Baste the fish with the pan juices halfway through cooking.
  • Remove from oven and let it rest for a few minutes.
  • Garnish with fresh parsley before serving.
  • Serve with lemon wedges on the side.
