Preheat your oven to 400°F (200°C).
Line a baking dish with parchment paper.
In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
Place the cod fillets in the baking dish, skin side down.
Brush the olive oil mixture generously over the cod fillets.
Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily.
Baste the fish with the pan juices halfway through cooking.
Remove from oven and let it rest for a few minutes.
Garnish with fresh parsley before serving.
Serve with lemon wedges on the side.
