Ingredients

  • 3 large eggs
  • 1 cup fresh spinach
  • 1/2 bell pepper sliced
  • 1/4 cup shredded cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a cast-iron skillet over medium heat.
  • Add sliced bell pepper and sauté for 3-4 minutes until softened.
  • Stir in fresh spinach and cook until wilted.
  • Season the vegetables with salt and pepper.
  • Make three small wells in the vegetable mixture.
  • Crack an egg into each well carefully.
  • Sprinkle cheese over the top of the eggs.
  • Transfer the skillet to the preheated oven.
  • Bake for 12-15 minutes, or until the egg whites are set.
