Preheat your oven to 375°F (190°C).
Heat olive oil in a cast-iron skillet over medium heat.
Add sliced bell pepper and sauté for 3-4 minutes until softened.
Stir in fresh spinach and cook until wilted.
Season the vegetables with salt and pepper.
Make three small wells in the vegetable mixture.
Crack an egg into each well carefully.
Sprinkle cheese over the top of the eggs.
Transfer the skillet to the preheated oven.
Bake for 12-15 minutes, or until the egg whites are set.
Garnish with fresh herbs before serving.
