Ingredients

  • 4 medium russet potatoes baked and cooled
  • 1 cup sour cream
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup milk
  • 4 slices bacon cooked and crumbled
  • Salt and pepper to taste
  • Optional: additional cheese for topping

Instructions

  • Preheat your oven to 400°F (200°C) and bake the potatoes for about 1 hour until tender.
  • Once cool, peel the potatoes and cut them into small cubes.
  • In a large pot, heat the broth over medium heat.
  • Add the cubed potatoes to the broth and bring to a simmer.
  • Using a potato masher, mash some of the potatoes to thicken the soup.
  • Stir in the milk and sour cream until well combined.
  • Add salt and pepper to taste.
  • Mix in half of the shredded cheese and allow it to melt.
  • Serve hot, garnished with crumbled bacon, remaining cheese, and green onions.
