Preheat your oven to 400°F (200°C) and bake the potatoes for about 1 hour until tender.
Once cool, peel the potatoes and cut them into small cubes.
In a large pot, heat the broth over medium heat.
Add the cubed potatoes to the broth and bring to a simmer.
Using a potato masher, mash some of the potatoes to thicken the soup.
Stir in the milk and sour cream until well combined.
Add salt and pepper to taste.
Mix in half of the shredded cheese and allow it to melt.
