Preheat your oven to 325°F (160°C).
In a mixing bowl, combine graham cracker crumbs with melted butter.
Press the mixture into the bottom of a springform pan to form the crust.
In another bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract and Greek yogurt until fully combined.
In a separate bowl, mix walnuts, cinnamon, honey, and water to create the baklava topping.
Pour half of the cheesecake mixture over the crust.
Add the baklava mixture on top, then pour the remaining cheesecake mixture over it.
Bake for 1 hour or until the center is set. Let it cool and refrigerate for at least 4 hours before serving.
