Preheat your oven to 375°F (190°C).
In a skillet, brown the ground beef with chopped onion and minced garlic.
Season the beef with cumin, chili powder, salt, and pepper.
Warm the corn tortillas in a dry skillet or microwave until pliable.
Spread a small amount of enchilada sauce on the bottom of a baking dish.
On each tortilla, place a portion of the beef mixture and sprinkle with cheese.
Roll the tortillas tightly and place them seam side down in the baking dish.
Pour the remaining enchilada sauce over the rolled tortillas.
Sprinkle additional cheese on top.
Bake for 20-25 minutes until bubbly and golden.
