Ingredients

  • 1 pound ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese cheddar or Monterey Jack
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, brown the ground beef with chopped onion and minced garlic.
  • Season the beef with cumin, chili powder, salt, and pepper.
  • Warm the corn tortillas in a dry skillet or microwave until pliable.
  • Spread a small amount of enchilada sauce on the bottom of a baking dish.
  • On each tortilla, place a portion of the beef mixture and sprinkle with cheese.
  • Roll the tortillas tightly and place them seam side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas.
  • Sprinkle additional cheese on top.
  • Bake for 20-25 minutes until bubbly and golden.
