Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt, pepper, and garlic powder.
In a skillet, heat the olive oil over medium heat.
Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside.
In the same skillet, add the spinach and sauté until wilted.
Spread the boursin cheese over the chicken breasts.
Add the sautéed spinach on top of the cheese.
Transfer the skillet to the preheated oven.
Bake for 15-20 minutes until the chicken is cooked through (internal temperature of 165°F).
