Ingredients

  • 2 boneless skinless chicken breasts
  • 4 oz boursin cheese herbed or garlic
  • 1 cup spinach fresh or frozen
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt, pepper, and garlic powder.
  • In a skillet, heat the olive oil over medium heat.
  • Add the chicken breasts and sear for 4-5 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the spinach and sauté until wilted.
  • Spread the boursin cheese over the chicken breasts.
  • Add the sautéed spinach on top of the cheese.
  • Transfer the skillet to the preheated oven.
  • Bake for 15-20 minutes until the chicken is cooked through (internal temperature of 165°F).
