Ingredients

  • 1 cup cooked rice
  • 1 cup grilled chicken sliced
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded lettuce
  • 1/4 cup sour cream or Greek yogurt
  • 1 lime cut into wedges
  • Fresh cilantro chopped (optional)
  • Salt and pepper to taste

Instructions

  • Cook the rice according to package instructions and set aside.
  • Preheat your grill or skillet to medium-high heat.
  • Season the chicken breasts with salt, pepper, and any desired spices.
  • Grill the chicken for about 6-7 minutes on each side until fully cooked.
  • Remove chicken from heat and let it rest for a few minutes.
  • Slice the grilled chicken into strips.
  • In a bowl, layer cooked rice as the base.
  • Add black beans on one side of the rice.
  • Next to the beans, add grilled chicken slices.
  • Top the chicken with corn, diced tomatoes, and shredded lettuce.
  • Drizzle sour cream over the top and garnish with lime wedges and cilantro.
