Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or frosting
  • Optional: fruit preserves or fresh fruit

Instructions

  • Preheat your oven to 350°F (175°C) and grease a jelly roll pan.
  • In a mixing bowl, beat the eggs and sugar together until thick and pale.
  • Sift together the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the egg mixture.
  • Mix in the milk, vegetable oil, and vanilla extract until smooth.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 12-15 minutes until golden brown and springy to the touch.
  • While still warm, invert the cake onto a clean kitchen towel dusted with powdered sugar.
  • Roll the cake up with the towel and let it cool completely.
  • Unroll the cooled cake, spread with whipped cream or frosting, and optional fruit preserves.
  • Roll it back up carefully and chill for at least 30 minutes before slicing.
