Roll out the dough thinly and cut into circles.
Wrap the circles around cannoli tubes and seal edges with egg wash.
Deep fry the tubes in hot oil until golden brown.
Remove and let cool before sliding out the tubes.
In a bowl, mix ricotta, powdered sugar, and vanilla until smooth. Fill cooled shells and garnish with chocolate chips or pistachios.
