Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter softened
  • 1 egg
  • 1/4 cup white wine or vinegar
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate chips optional
  • Chopped pistachios optional

Instructions

  • In a large bowl, mix flour, sugar, and salt.
  • Add softened butter and mix until crumbly.
  • Stir in the egg and wine/vinegar until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes.
  • Wrap the dough in plastic wrap and let it rest for 30 minutes.
  • Roll out the dough thinly and cut into circles.
  • Wrap the circles around cannoli tubes and seal edges with egg wash.
  • Deep fry the tubes in hot oil until golden brown.
  • Remove and let cool before sliding out the tubes.
  • In a bowl, mix ricotta, powdered sugar, and vanilla until smooth. Fill cooled shells and garnish with chocolate chips or pistachios.
