Ingredients

  • 4 medium carrots grated
  • 2 cups mixed greens spinach, arugula
  • 1/4 cup raisins
  • 1/4 cup toasted sunflower seeds
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Fresh herbs parsley or cilantro for garnish

Instructions

  • Wash the carrots thoroughly.
  • Peel the carrots using a vegetable peeler.
  • Grate the carrots using a box grater or a food processor.
  • Rinse the mixed greens and pat them dry with a paper towel.
  • In a large mixing bowl, combine the grated carrots and mixed greens.
  • Add the raisins and toasted sunflower seeds to the bowl.
  • In a small bowl, whisk together the olive oil, apple cider vinegar, and honey.
  • Pour the dressing over the salad mixture.
  • Toss the salad gently to combine all ingredients.
  • Season with salt and pepper to taste, then garnish with sesame seeds and fresh herbs.
