Remove the leaves from the cauliflower and trim the stem.
Place the cauliflower head upright on a cutting board.
Slice the cauliflower into 1-inch thick steaks.
Brush each steak with olive oil on both sides.
Season with salt, pepper, garlic powder, and smoked paprika.
Arrange the steaks on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes or until golden brown.
Flip halfway through for even cooking.
Remove from the oven and garnish with fresh herbs before serving.
