Place the chicken breasts at the bottom of the crockpot.
In a bowl, mix the diced tomatoes, bell pepper, onion, and garlic.
Pour the vegetable mixture over the chicken.
Sprinkle paprika and Italian seasoning evenly on top.
Season with salt and pepper to taste.
Pour chicken broth into the crockpot.
Cover and set the crockpot to low for 4-6 hours or high for 2-3 hours.
Check the internal temperature of the chicken.
Once cooked, shred the chicken using two forks.
Stir to combine with the sauce before serving.
