Ingredients

  • 1 cup cooked rice
  • 1 chicken breast grilled and sliced
  • ½ cup diced tomatoes
  • ½ cup guacamole
  • ¼ cup chopped cilantro
  • ½ cup black beans optional
  • ¼ cup shredded cheese
  • Juice of 1 lime
  • Salt and pepper to taste
  • Tortilla chips for crunch

Instructions

  • Cook rice according to package instructions and set aside.
  • Season the chicken breast with salt, pepper, and lime juice.
  • Grill the chicken until fully cooked, about 6-7 minutes per side.
  • Let the chicken rest for 5 minutes, then slice into strips.
  • In a bowl, layer the cooked rice at the bottom.
