Place the chicken in the bottom of the crockpot.
Season the chicken with salt, pepper, paprika, and Italian seasoning.
Add chopped onions and garlic on top of the chicken.
Layer the diced tomatoes evenly over the vegetables.
Add the chopped bell peppers for extra flavor and color.
Pour the chicken broth into the crockpot.
Cover the crockpot with its lid.
Set to cook on low for 6-8 hours or high for 3-4 hours.
Check the chicken for doneness about 30 minutes before serving.
Once cooked, shred the chicken and mix it with the sauce.
