Ingredients

  • 4 chicken thighs or breasts
  • 1 cup diced tomatoes
  • 1 cup bell peppers chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Place the chicken in the bottom of the crockpot.
  • Season the chicken with salt, pepper, paprika, and Italian seasoning.
  • Add chopped onions and garlic on top of the chicken.
  • Layer the diced tomatoes evenly over the vegetables.
  • Add the chopped bell peppers for extra flavor and color.
  • Pour the chicken broth into the crockpot.
  • Cover the crockpot with its lid.
  • Set to cook on low for 6-8 hours or high for 3-4 hours.
  • Check the chicken for doneness about 30 minutes before serving.
  • Once cooked, shred the chicken and mix it with the sauce.
