Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs
  • 1 can creamed corn
  • 1 cup shredded cheese
  • 1 cup cooked and crumbled sausage optional
  • 1/2 cup chopped green onions
  • 1 tsp baking powder
  • Salt and pepper to taste
  • 1/4 cup melted butter

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine cornmeal, baking powder, salt, and pepper.
  • In another bowl, whisk together milk and eggs until well combined.
  • Gradually add the milk mixture to the cornmeal, stirring until smooth.
  • Fold in the creamed corn, cheese, sausage, and green onions.
  • Pour melted butter into the mixture and combine thoroughly.
  • Transfer the mixture into a greased baking dish.
  • Bake for 30-35 minutes until the top is golden and a toothpick inserted comes out clean.
  • Let it cool for a few minutes before serving.
