Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 2 eggs
  • 1 can black beans drained and rinsed
  • 1 cup bell peppers diced
  • 1 cup corn kernels
  • 1 tsp baking powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine cornmeal, baking powder, and spices.
  • In another bowl, whisk together milk and eggs.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Add the black beans, corn, and bell peppers to the mixture.
  • Fold in half of the shredded cheese, if using.
  • Pour the batter into a greased baking dish.
  • Sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 25-30 minutes or until golden brown.
  • Let cool for a few minutes before serving.
