In another bowl, whisk together milk and eggs.
Pour the wet ingredients into the dry ingredients and mix well.
Add the black beans, corn, and bell peppers to the mixture.
Fold in half of the shredded cheese, if using.
Pour the batter into a greased baking dish.
Sprinkle the remaining cheese on top.
Bake in the preheated oven for 25-30 minutes or until golden brown.
Let cool for a few minutes before serving.
