Ingredients

  • 2 cups rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell peppers diced
  • 1/2 cup red onion finely chopped
  • 1 cup frozen peas thawed
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Begin by boiling water in a large pot.
  • Add rotini pasta and cook according to package instructions until al dente.
  • Drain the pasta and rinse it under cold water.
  • In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, bell peppers, red onion, and peas.
  • In a separate bowl, mix mayonnaise, sour cream, Dijon mustard, salt, and pepper to create the dressing.
  • Pour the dressing over the pasta and vegetable mixture, and toss gently to combine.
  • Taste and adjust seasoning if necessary.
  • Cover the salad and refrigerate for at least 30 minutes.
  • Before serving, give the salad a final toss and garnish with fresh parsley.
  • Serve chilled and enjoy!
