Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can 10.5 oz cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1 cup mixed vegetables carrots, peas, corn
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  • Prepare the crockpot by spraying it with cooking spray.
  • Place the chicken breasts at the bottom of the crockpot.
  • In a bowl, mix the rice, cream of chicken soup, and chicken broth.
  • Pour the mixture over the chicken in the crockpot.
  • Add the mixed vegetables evenly over the top.
  • Sprinkle garlic powder, onion powder, salt, and pepper over the dish.
  • Drizzle olive oil on top for added flavor.
  • Cover the crockpot with the lid and set it to cook on low for 4-6 hours.
  • After cooking, shred the chicken using two forks for easier serving.
  • Serve hot, garnished with fresh parsley.
