Ingredients

  • 1 lb beef stew meat
  • 1 cup carrots diced
  • 1 cup potatoes diced
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic minced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  • Start by dicing all vegetables into uniform pieces.
  • In a skillet, brown the beef stew meat on medium-high heat for about 5 minutes.
  • Transfer the browned meat to the crockpot.
  • Add diced carrots, potatoes, celery, and onion to the crockpot.
  • Pour in the beef broth and diced tomatoes.
  • Add minced garlic, thyme, salt, and pepper.
  • Stir all ingredients to combine well.
  • Cover the crockpot and set it to low for 8 hours or high for 4 hours.
  • Once cooked, taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs if desired.
