Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the eggs and milk until smooth.
Stir in the shredded cheese and season with salt and pepper.
Add the chopped vegetables and meat, mixing well.
Grease a muffin tin with non-stick spray or oil.
Pour the egg mixture into each muffin cup, filling them about 3/4 full.
Place the muffin tin in the preheated oven.
Bake for about 20 minutes, or until the egg bites are set.
Remove from the oven and let cool for a few minutes.
Gently remove the egg bites from the muffin tin and serve warm.
