Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese
  • 1/2 cup chopped vegetables
  • 1/4 cup cooked bacon or sausage optional
  • Salt and pepper to taste
  • Fresh herbs for garnish optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs and milk until smooth.
  • Stir in the shredded cheese and season with salt and pepper.
  • Add the chopped vegetables and meat, mixing well.
  • Grease a muffin tin with non-stick spray or oil.
  • Pour the egg mixture into each muffin cup, filling them about 3/4 full.
  • Place the muffin tin in the preheated oven.
  • Bake for about 20 minutes, or until the egg bites are set.
  • Remove from the oven and let cool for a few minutes.
  • Gently remove the egg bites from the muffin tin and serve warm.
