Ingredients

  • 2 medium eggplants sliced
  • Salt for sweating eggplant
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • Olive oil for frying
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the eggplant and sprinkle with salt; let sit for 30 minutes.
  • Rinse and dry the eggplant.
  • Coat each slice in flour, then dip in beaten eggs, and finally breadcrumbs.
  • Fry the eggplant slices in olive oil until golden brown.
  • Spread marinara sauce in a baking dish.
  • Layer fried eggplant, marinara sauce, and mozzarella cheese.
  • Repeat layers until all ingredients are used.
  • Top with remaining mozzarella and Parmesan cheese.
  • Bake for 25-30 minutes until cheese is bubbly and golden.
