Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables peas, carrots, bell peppers
  • 2 eggs beaten
  • 1 cup cooked chicken
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions sliced
  • Salt and pepper to taste

Instructions

  • Heat sesame oil in a large pan over medium heat.
  • Add garlic and ginger, sauté until fragrant.
  • Stir in mixed vegetables and cook for 3-4 minutes until tender.
  • Push vegetables to one side of the pan.
  • Pour beaten eggs on the other side and scramble until fully cooked.
  • Add cooked chicken to the pan.
  • Add the cooked rice, breaking up any clumps.
  • Drizzle soy sauce over the rice and mix well.
  • Season with salt and pepper to taste.
  • Stir in sliced green onions before serving.
