Heat sesame oil in a large pan over medium heat.
Add garlic and ginger, sauté until fragrant.
Stir in mixed vegetables and cook for 3-4 minutes until tender.
Push vegetables to one side of the pan.
Pour beaten eggs on the other side and scramble until fully cooked.
Add cooked chicken to the pan.
Add the cooked rice, breaking up any clumps.
Drizzle soy sauce over the rice and mix well.
Season with salt and pepper to taste.
Stir in sliced green onions before serving.
