Ingredients

  • 2 medium zucchinis
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Fresh parsley for garnish

Instructions

  • Wash and slice the zucchinis into 1/4-inch thick rounds.
  • Set up a breading station: one bowl for flour, one for beaten eggs, and one for breadcrumbs mixed with garlic powder, salt, and pepper.
  • Dip each zucchini slice into the flour, ensuring it’s fully coated.
  • Next, dip the floured slice into the beaten eggs.
  • Finally, coat the slice with the breadcrumb mixture, pressing lightly to adhere.
  • Heat vegetable oil in a large skillet over medium heat.
  • Once the oil is hot, carefully add the breaded zucchini slices in a single layer.
  • Fry for 3-4 minutes on each side or until golden brown.
  • Remove the fried zucchini and place them on a paper towel to drain excess oil.
  • Garnish with fresh parsley before serving.
