Ingredients

  • 2 cups mixed dried fruits raisins, currants, cherries
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup orange juice
  • Zest of 1 orange
  • 1 cup chopped nuts optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a cake pan.
  • In a large bowl, cream together the softened butter and brown sugar until fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • In another bowl, combine the flour, baking powder, and spices.
  • Gradually add the dry ingredients to the wet mixture, alternating with orange juice.
  • Fold in the mixed dried fruits and nuts if using.
  • Pour the batter into the prepared cake pan.
  • Bake in the preheated oven for 1 hour and 15 minutes or until a toothpick comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  • Decorate with fresh fruits and icing once completely cooled.
