Ingredients

  • 2 cups of mashed potatoes
  • 1 cup of all-purpose flour plus more for dusting
  • 1 large egg
  • 1 teaspoon of salt
  • A pinch of nutmeg optional
  • Sauce of your choice e.g., marinara, pesto

Instructions

  • Boil the potatoes until tender, then drain and let them cool.
  • Peel the cooled potatoes and mash them until smooth.
  • In a large bowl, combine the mashed potatoes, flour, salt, and nutmeg.
  • Create a well in the center and crack in the egg.
  • Gently mix the ingredients until a dough forms.
  • Turn the dough onto a floured surface and knead lightly.
  • Divide the dough into 4 parts for easier handling.
  • Roll each part into a long rope about 1/2 inch thick.
  • Cut the rope into 1-inch pieces to form the gnocchi.
  • Press each piece with a fork to create ridges for sauce adherence.
