Ingredients

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the diced onion and minced garlic until softened.
  • Add the ground beef to the skillet and cook until browned.
  • Stir in cumin, chili powder, salt, and pepper. Cook for another 2 minutes.
  • Warm the tortillas in a dry skillet for about 30 seconds on each side.
  • Spread a small amount of enchilada sauce on the bottom of a baking dish.
  • Place a generous spoonful of the beef mixture onto each tortilla.
  • Roll the tortillas tightly and place them seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas.
  • Sprinkle shredded cheese on top and bake for 20 minutes or until cheese is bubbly.
