Preheat your oven to 375°F (190°C).
In a skillet, cook the diced onion and minced garlic until softened.
Add the ground beef to the skillet and cook until browned.
Stir in cumin, chili powder, salt, and pepper. Cook for another 2 minutes.
Warm the tortillas in a dry skillet for about 30 seconds on each side.
Spread a small amount of enchilada sauce on the bottom of a baking dish.
Place a generous spoonful of the beef mixture onto each tortilla.
Roll the tortillas tightly and place them seam-side down in the baking dish.
Pour the remaining enchilada sauce over the rolled tortillas.
Sprinkle shredded cheese on top and bake for 20 minutes or until cheese is bubbly.
