Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mash the ripe bananas until smooth.
Add honey (or maple syrup), applesauce, and vanilla extract to the mashed bananas; mix well.
In a separate bowl, combine the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
If desired, fold in chopped nuts or chocolate chips.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
