Preheat your oven to 400°F (200°C).
In a small bowl, combine honey, soy sauce, minced garlic, olive oil, grated ginger, and apple cider vinegar.
Season the pork chops with salt and pepper on both sides.
Place the pork chops in a resealable bag and pour the marinade over them, then seal and refrigerate.
Heat a skillet over medium-high heat and sear the pork chops for 3-4 minutes on each side.
Transfer the seared chops to a baking dish and pour the remaining marinade over.
Bake for 15-20 minutes until the internal temperature reaches 145°F (63°C).
Let the pork chops rest for 5 minutes before serving.
Garnish with fresh parsley.
