Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • Oil for frying

Instructions

  • In a mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar.
  • In another bowl, whisk together buttermilk and egg.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Fold in the chopped onion and bell pepper.
  • Heat oil in a deep fryer or large saucepan to 350°F (175°C).
  • Using a spoon, drop the batter into the hot oil.
  • Fry until golden brown, about 3-4 minutes per side.
  • Remove from oil and drain on paper towels.
  • Serve warm with dipping sauce.
