Ingredients

  • 2 lbs beef chuck roast
  • 1 cup beef broth
  • 1 packet Italian seasoning
  • 1 onion sliced
  • 1 bell pepper sliced
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • Giardiniera for topping
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Season the beef chuck roast with salt and pepper.
  • In a skillet, sear the roast on all sides until browned.
  • Place the beef in a slow cooker.
  • Add beef broth and Italian seasoning to the slow cooker.
  • Top with sliced onions and bell peppers.
  • Cover and cook on low for 6-8 hours until beef is tender.
  • Remove the beef and shred it with two forks.
  • Return the shredded beef to the slow cooker and mix with juices.
  • Toast the hoagie rolls lightly.
  • Assemble the sandwiches: place shredded beef on the roll, top with provolone cheese and giardiniera.
