Ingredients

  • 250 g pasta fettuccine or penne
  • 300 g Italian sausage sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 can 400g diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Grated Parmesan cheese for serving

Instructions

  • Boil a large pot of salted water and cook pasta according to package instructions until al dente.
  • In a large skillet, heat olive oil over medium heat.
  • Add sliced Italian sausage and sauté until browned, about 5-7 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add diced tomatoes and Italian seasoning to the skillet.
  • Season with salt and pepper, then bring the mixture to a simmer.
  • Cook for about 10 minutes, allowing the flavors to meld.
  • Once pasta is cooked, drain and reserve some pasta water.
  • Add the cooked pasta to the skillet and toss with the sausage sauce.
  • If necessary, add a splash of reserved pasta water for desired consistency.
