Ingredients

  • 1 cup chopped Romaine lettuce
  • 1/2 cup diced cucumber
  • 1/2 cup chopped bell peppers red, yellow, green
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion finely chopped
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  • Wash all fresh produce thoroughly under cold water.
  • Chop the Romaine lettuce into bite-sized pieces and place in a large mixing bowl.
  • Dice the cucumber and add it to the bowl with the lettuce.
  • Chop the bell peppers into small pieces and add to the mix.
  • Dice the tomatoes and include them in the bowl.
  • Finely chop the red onion and add it to the salad.
  • Slice the Kalamata olives and mix them in with the other ingredients.
  • Sprinkle the crumbled feta cheese over the salad.
  • Chop the fresh parsley and add it for a burst of flavor.
  • In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper, then drizzle over the salad.
  • Toss the salad gently to combine all ingredients and dressing evenly.
