Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • cup vegetable oil
  • 1 large egg
  • 1 cup milk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • Powdered sugar for dusting

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the vegetable oil, egg, milk, lemon zest, and lemon juice until well combined.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  • Using a scoop, distribute the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  • Remove from the oven and let cool in the pan for 5 minutes.
  • Transfer muffins to a wire rack to cool completely.
  • Dust with powdered sugar before serving, if desired.
