Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ cup unsalted butter chilled and cubed
  • 1 large egg yolk
  • 2 large eggs
  • 1 cup granulated sugar
  • 2/3 cup fresh lemon juice
  • Zest of 2 lemons
  • ¼ cup heavy cream
  • Powdered sugar for dusting

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine flour and powdered sugar.
  • Add the cubed butter and mix until crumbly.
  • Stir in the egg yolk until the dough comes together.
  • Press the dough into a tart pan evenly.
  • Bake the crust for 15 minutes until golden.
  • In another bowl, whisk together eggs, granulated sugar, lemon juice, and zest.
  • Mix in the heavy cream until smooth.
  • Pour the lemon mixture into the baked crust.
  • Bake for an additional 15 minutes until set.
