Preheat the oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly.
Pierce the potatoes several times with a fork.
Rub them with olive oil, salt, and pepper.
Place the potatoes on a baking sheet and bake for 45 minutes or until tender.
Once cooked, remove from the oven and let cool slightly.
Slice each potato open lengthwise.
Fluff the insides with a fork and season with garlic powder and paprika.
Top with shredded cheddar cheese and crumbled bacon.
Return to the oven for an additional 5-10 minutes until cheese is melted.
Garnish with sour cream, green onions, and fresh parsley before serving.
