Ingredients

  • 2 large sweet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly.
  • Pierce the potatoes several times with a fork.
  • Rub them with olive oil, salt, and pepper.
  • Place the potatoes on a baking sheet and bake for 45 minutes or until tender.
  • Once cooked, remove from the oven and let cool slightly.
  • Slice each potato open lengthwise.
  • Fluff the insides with a fork and season with garlic powder and paprika.
  • Top with shredded cheddar cheese and crumbled bacon.
  • Return to the oven for an additional 5-10 minutes until cheese is melted.
  • Garnish with sour cream, green onions, and fresh parsley before serving.
