Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Frosting of choice

Instructions

  • Preheat your oven to 350°F (175°C) and line a mini cupcake pan with liners.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  • Mix until just combined, being careful not to overmix.
  • Fill each mini cupcake liner about two-thirds full with batter.
  • Bake in the preheated oven for 12-15 minutes, or until a toothpick comes out clean.
  • Let them cool completely before frosting and decorating.
