Preheat your oven to 350°F (175°C).
Grease a bundt pan with cooking spray or butter.
In a bowl, mix sugar and cinnamon together.
Cut each biscuit into quarters.
Roll each piece in the cinnamon sugar mixture.
Layer the coated biscuit pieces in the bundt pan.
In a saucepan, melt butter and brown sugar together over medium heat.
Stir in vanilla extract and pour over the biscuit pieces.
Sprinkle nuts on top if using.
Bake for 30-35 minutes until golden brown.
Let it cool for 10 minutes before inverting onto a plate.
