Ingredients

  • 2 large eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1/4 cup shredded cheese
  • Optional fillings: diced tomatoes spinach, mushrooms, bell peppers, herbs

Instructions

  • Crack the eggs into a bowl and add milk, salt, and pepper. Whisk until well combined.
  • Heat a non-stick skillet over medium heat and add butter.
  • Once the butter is melted and bubbling, pour in the egg mixture.
  • Let the eggs cook undisturbed for about 1-2 minutes or until the edges start to set.
  • Using a spatula, gently lift the edges of the omelet, allowing uncooked eggs to flow underneath.
  • When the top is still slightly runny, sprinkle cheese and your choice of fillings over one half of the omelet.
  • Carefully fold the other half over the fillings.
  • Let it cook for another minute to allow the cheese to melt.
  • Slide the omelet onto a plate and garnish with herbs if desired.
