Ingredients

  • 8 oz. pasta fusilli or penne
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 2 cups cherry tomatoes halved
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add diced onions and garlic, sauté until fragrant.
  • Stir in chopped bell peppers and cook until softened.
  • Add halved cherry tomatoes and season with salt and pepper.
  • Pour in vegetable broth and bring to a boil.
  • Add uncooked pasta to the pot, stirring to combine.
  • Reduce heat and simmer, covered, for about 10 minutes.
  • Stir occasionally to prevent sticking.
  • Once pasta is al dente, remove from heat and stir in fresh basil.
  • Serve hot, garnished with additional basil if desired.
