Ingredients

  • 2 cups green papaya peeled and shredded
  • 1 cup cherry tomatoes halved
  • 1 cup green beans cut into 1-inch pieces
  • 1/2 cup peanuts roasted and roughly chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon palm sugar
  • 1 clove garlic minced
  • 1-2 Thai chilies crushed
  • Fresh mint leaves for garnish

Instructions

  • Prepare the green papaya by peeling and shredding it into thin strips.
  • Rinse the cherry tomatoes and cut them in half.
  • Trim the green beans and cut them into 1-inch pieces.
  • In a large mixing bowl, combine the shredded papaya, tomatoes, and green beans.
  • In a small bowl, mix the fish sauce, lime juice, palm sugar, garlic, and crushed chilies.
  • Pour the dressing over the salad mixture and toss well to combine.
  • Add the chopped peanuts and mix gently.
  • Taste and adjust seasoning if necessary.
  • Garnish with fresh mint leaves before serving.
