Place the coated chicken breasts on a baking sheet lined with parchment paper.
Drizzle a little olive oil over the tops for added crispness.
Bake in the preheated oven for 25-30 minutes, or until golden brown and cooked through.
Sprinkle additional Parmesan cheese on top during the last 5 minutes of baking.
Remove from the oven, garnish with fresh parsley, and serve hot.
