Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 eggs beaten
  • Olive oil for drizzling
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a shallow dish, combine breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • In another dish, beat the eggs.
  • Dip each chicken breast into the beaten eggs, ensuring it’s fully coated.
  • Dredge the chicken in the breadcrumb mixture, pressing to adhere.
  • Place the coated chicken breasts on a baking sheet lined with parchment paper.
  • Drizzle a little olive oil over the tops for added crispness.
  • Bake in the preheated oven for 25-30 minutes, or until golden brown and cooked through.
  • Sprinkle additional Parmesan cheese on top during the last 5 minutes of baking.
  • Remove from the oven, garnish with fresh parsley, and serve hot.
