Ingredients

  • 4 medium-sized potatoes
  • 1 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes thoroughly.
  • Pat the potatoes dry with a towel.
  • Prick each potato with a fork to create steam vents.
  • Coat the potatoes with olive oil and sprinkle with salt.
  • Place them directly on the oven rack and bake for 30-35 minutes.
  • In a mixing bowl, combine grated parmesan, heavy cream, minced garlic, and pepper.
  • Once the potatoes are cooked, remove them from the oven and let cool slightly.
  • Cut a slit in each potato and gently squeeze to open them.
  • Spoon the creamy parmesan mixture into the potatoes and return to the oven for an additional 10 minutes.
