Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • Red and green food coloring
  • 1 cup powdered sugar for decoration

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and peppermint extract.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • Divide the dough into two portions.
  • Color one portion with red food coloring and the other with green.
  • Roll out each colored dough between parchment paper until ¼ inch thick.
  • Cut out circles from both doughs and layer them to form a peppermint swirl design.
  • Place the cookies on a baking sheet lined with parchment paper and bake for 12-15 minutes or until lightly golden.
