Cut off the top and bottom of the pineapple to create a stable base.
Stand the pineapple upright and carefully slice off the skin, removing all the 'eyes.'
Cut the pineapple into chunks, discarding the core.
Place the pineapple chunks into a blender.
Add sugar if desired, and blend until smooth.
For a thinner consistency, add cold water and blend again.
Strain the juice through a fine mesh sieve or cheesecloth into a pitcher.
Chill in the refrigerator for at least 30 minutes.
