Preheat your oven to 400°F (200°C).
Roll out the pizza dough on a floured surface to about 1/4 inch thick.
Cut the dough into squares, approximately 3x3 inches.
In a bowl, mix the mozzarella cheese, chopped pepperoni, bell pepper, pizza sauce, and Italian seasoning.
Place a spoonful of the filling in the center of each square.
Fold the corners of the square over the filling to create a pocket.
Pinch the edges to seal the rolls tightly.
Place the rolls on a baking sheet lined with parchment paper.
Brush the tops with olive oil and sprinkle with Parmesan cheese.
Bake for 15-20 minutes or until golden brown.
