Ingredients

  • 1 whole chicken 3-4 lbs
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • Juice of 2 limes
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, oregano, salt, and pepper.
  • Rinse the chicken under cold water and pat dry with paper towels.
  • Rub the marinade all over the chicken, ensuring it is well coated.
  • Place the chicken breast-side up in a roasting pan.
  • Tie the legs together with kitchen twine for even cooking.
  • Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  • Baste the chicken with its juices halfway through cooking for added flavor.
  • Let the chicken rest for 10-15 minutes after removing from the oven.
  • Carve the chicken and serve with fresh cilantro on top.
