Ingredients

  • 2 lbs pork belly skin on
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 300°F (150°C).
  • Score the skin of the pork belly in a criss-cross pattern.
  • Rub salt, pepper, garlic powder, onion powder, paprika, and brown sugar all over the pork belly.
  • Place the pork belly in a roasting pan, skin side up.
  • Pour chicken broth and soy sauce into the pan.
  • Cover the pan with aluminum foil.
  • Roast in the oven for 2.5 hours.
  • Remove the foil and increase the oven temperature to 450°F (230°C).
  • Roast for an additional 30 minutes until the skin is crispy.
  • Let the pork belly rest for 10 minutes before slicing.
